Mini Cocktail Meatballs

  • 1 pound (16 ounces) ground beef
  • 1 small onion or shallot, finely diced.
  • 1/4 cup (1 small onion) chopped fine
  • 3/4 cup dried breadcrumbs
  • 1/4 cup parsley
  • 1/4 cup grated cheese
  • 1 Egg
  • 1 clove garlic, shredded
  • 1 teaspoon each of Salt & Pepper

METHOD

  1. Preheat oven to 375F
  2. Roll into 1 ounce balls by hand (30 grams each)
  3. Put into a mini muffin nonstick tin and bake for at least 15 minutes, then turn them over to cook on the other side so the browning is even.
