Coconut Rice

Coconut rice is very simple, you just swap out the usual tap water with coconut water. It really is that simple. Any rice can be used, but I prefer basmati rice. If you use a rice cooker, it is easier, but you can cook this the traditional way, with a heavy pot and tight fitting lid. It takes about 25 minutes.

Here is the recipe I use:

INGREDIENTS

  • 1 cup basmati rice
  • 1.75 cups coconut water
  • 1 tablespoon coconut or vegetable oil, even butter will work
  • 1/4 teaspoon kosher salt
