Java Hibachi Skewers

One of the staples of any pupu platter are the hibachi skewers of beef and chicken.  The simplest things with the simplest ingredients can come together in the simplest of settings.  Such is this Asian BBQ made at home.  You can use beef or chicken for this, or both.  Just be sure to marinate each meat separately to avoid cross-contamination.  Be sure to marinate for at least an hour, up to 2-3 hours. I have never done it past 2 hours, and while many claim 3 hours is fine, the meat(s) might start to break down.

INGREDIENTS

  • 1 pound beef, thinly sliced
  • 1/3 cup sugar
  • 1/3 cup soy sauce
  • 2 tablespoons sake or rice wine vinegar
  • 1 piece (10grams) ginger, grated
  • 1 to 2 cloves garlic, crushed
  • 2 tablespoons sesame seeds, plus more to taste
  • 2 tablespoons canola oil
  • 2 green onions, chopped
