Hawaiian Meatballs

Hawaiian Meatballs

This is an easy enough recipe, it is just a 2-step recipe, combine all the ingredients, and bake.  I like to serve this with coconut basmati rice.

INGREDIENTS

  • 1 pound ground beef
  • 9 strips pre-cooked bacon
  • 2 ounces soy sauce
  • 1/2 cup panko breadcrumbs
  • 1 can (8 ounces) crushed pineapple and/or pineapple chunks, with juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh cilantro
  • 2 teaspoons fresh ground ginger

METHOD

  1. Preheat oven to 350F
  2. In a food processor blend the bacon, cilantro, salt, pepper, pineapple and soy sauce.
  3. Add to the meat and panko bread crumbs last.
  4. roll into 1 ounce balls by hand (30 grams each)
  5. Put into a mini muffin nonstick tin and bake for at least 15 minutes, then turn them over to cook on the other side so the browning is even.  If it is too brown, remember, this is just the sugar in the pineapples and juice, they are not necessarily burnt, but 30 minutes is about the right cooking time.  They should look like the color in this photo below.
