Banana Bread
INGREDIENTS
- 3 ripe bananas
- 1/2 cup unsalted butter, (8 Tbsp) at room temperature
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1.5 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon pure vanilla extract
- 1 cup chopped walnuts
- 1/2 cup raisins
INGREDIENTS (Version 2)
- 3 ripe banana
- 6 tablespoons butter at room temperature
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1.5 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon pure vanilla extract
- 1/2 cup chopped walnuts
METHOD

Preheat the oven to 350°F.

Grease and flour a 8″x4″ non stick bread loaf pan

Whisk together melted butter along with sugar.

Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until blended.

In a separate bowl, whisk together: 1.5 cups of flour, baking soda and salt then add to batter.

Add 1/2 teaspoon of vanilla extract, add walnuts and pour into prepared loaf pan.

Bake at 350˚F for 70 min or until a toothpick inserted into the center comes out clean.

Let banana bread rest for 15 minutes before transferring to a wire rack to cool.
Store in an air-tight container unrefrigerated for up to 3-4 days and/or freeze the rest.
