Banana Bread

INGREDIENTS

  • 3 ripe bananas
  • 1/2 cup unsalted butter, (8 Tbsp) at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 1 cup chopped walnuts
  • 1/2 cup raisins

INGREDIENTS  (Version 2)

  • 3 ripe banana
  • 6 tablespoons butter at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1.5 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup chopped walnuts

METHOD

  • Preheat the oven to 350°F.
  • Grease and flour a 8″x4″ non stick bread loaf pan
  • Whisk together melted butter along with sugar.
  • Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until blended.
  • In a separate bowl, whisk together: 1.5 cups of flour, baking soda and salt then add to batter.
  • Add 1/2 teaspoon of vanilla extract, add walnuts and pour into prepared loaf pan.
  • Bake at 350˚F for 70 min or until a toothpick inserted into the center comes out clean.
  • Let banana bread rest for 15 minutes before transferring to a wire rack to cool.

Store in an air-tight container unrefrigerated for up to 3-4 days and/or freeze the rest.
