Raspberry Syrup

While not a lot of cocktails calls for this, it will give you plenty of ideas for creating new cocktails on your own.  It is necessary in the classic Clover Club cocktail.  If nothing else, its great over waffles or pancakes!

INGREDIENTS

  • 1/2 cup (115 grams) white granulated sugar
  • 1/2 cup (115 grams) spring water
  • 115 grams fresh raspberries

Heat water and sugar together, once hot and all the sugar is dissolved, place the raspberries in a jar, lightly muddle and leave in fridge for 24 hours.  You will see the syrup turn bright red, simply strain, bottle and keep for up to 2 weeks.
